There’s something about baking banana bread that just feels like home.
The smell, the warmth, the quiet moment while it bakes — it’s one of those simple things that slows everything down.
Lately, I’ve been leaning into slower mornings, baking during nap time, and finding comfort in little routines like this. This white chocolate macadamia banana bread was inspired by my boyfriend’s favorite cookies and has quickly become one of my favorites — soft, slightly sweet, and perfect with a cup of coffee.

Ingredients:
- 3 ripe bananas (the browner the better)
- 30g yogurt
- 3 tbsp brown sugar
- 2 tbsp sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- Cinnamon to taste (optional)
- Pinch of salt
- 1 tsp baking soda
- 187g whole flour
- 1/4 cup white chocolate chips
- 1/4 cup macadamia nuts
- Cinnamon sugar to top (optional)
Instructions:
1. Preheat oven to 350°F (175°C)
2.Mash bananas in a bowl until smooth
3. Mix in yogurt
4. Add sugar, egg, and vanilla — stir well
5. Sprinkle in baking soda, baking powder, Cinnamon, and salt
6. Fold in flour until just combined
7.Gently mix in white chocolate chips + macadamia nuts
8. Pour into a greased loaf pan and sprinkle cinnamon sugar on-top
9. Bake for 35-45 minutes (until a toothpick comes out clean)
10. Let cool (if you can wait 😅) and enjoy
Baking Tips:
- Use very ripe bananas for the best flavor
- Don’t over mix the batter (keep it soft)
- Add a sprinkle of cinnamon sugar on-top before baking for a slightly crisp and sweet top
