Lately I’ve been obsessed with cozy, high protein bakes that feel like a treat but actually keep me full — and this one might be my favorite yet.
It’s soft, chocolatey, naturally sweet, and comes together with super simple ingredients. Perfect for busy mornings, meal prep, or when you just want something warm and comforting without a ton of effort.
And honestly… anything with banana + chocolate is already a win.
Why You’ll Love This:
- High protein and filling
- Super easy (one bowl situation)
- Customizable with whatever you have on hand
- Perfect for breakfast, snack, or dessert

Ingredients:
- 3 ripe bananas (the browner the better)
- 1 egg
- 100g low fat Greek yogurt (I use okios vanilla pro)
- 3 tbsp brown sugar
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1/4 cup Brewed coffee warm or cold (NOT HOT or it will cook the egg when added)
- 187g whole wheat flour
- 2-3 tbsp Cocoa powder
- 1 scoop protein powder (optional) I like to use Revolution
- 1 tsp baking powder
- 1 tsp baking soda
- Pinch of salt
- Cinnamon (optional)
- Chocolate chips (optional)
- 2-4 tbsp milk of choice I used skim (to loosen batter. Batter should be thick but scoopable, not stiff)
Toppings (highly recommended)
- Banana slices
- Raspberries
- Chocolate chips
- Brown sugar cinnamon sprinkle
Instructions:
- Preheat the oven to 350°f (175°c)
- In a bowl, mash bananas until smooth
- Add egg, yogurt, vanilla, sugars, vanilla extract, and coffee
- Stir in flour, protein powder, baking soda, baking powder, and salt
- And milk if needed and fold in chocolate chip if you’re using them
- Pour into a parchment-lined pan and add toppings
- Bake for 40-45 minutes or until a toothpick inserted comes out clean
- Let cool slightly then remove from pan
How I Like to Eat It
Warm, with a coffee, usually during a quiet moment (or as quiet as it gets with a toddler 😂). It’s one of those recipes that feels like a treat but actually keeps me going. Sometimes I like to add a drizzle of peanut butter and a spoonful of Greek yogurt on top.
Notes:
- You can skip the protein powder if you would like
- Swap raspberries for any berry you like are none at all
- Add some peanut butter for extra richness
- Store slices in the fridge for easy grab and go
This is one of those recipes I didn’t overthink — just threw together what I had — and it turned out so good I had to share.
