If you’re craving something rich, soft, and chocolatey… these cookies are it 🤎
They’re slightly crisp on the outside, super soft in the middle, and topped with melty chocolate that makes them feel bakery-level fancy (but they’re so easy).
These have quickly become one of my go-to baking recipes—especially when I want something quick that still feels special.
Why You’ll Love These
- Soft + fudgy texture just like a brownie!
- Simple ingredients you already have
- Comes together in under 30 minutes
- Perfect for holidays, gifting, or just a cozy treat

Ingredients
½ cup butter (melted)
½ cup white sugar
½ cup brown sugar
1 egg
1 tsp vanilla extract
1 cup flour
½ cup cocoa powder
½ tsp baking soda
Pinch of salt
Chocolate kisses or chunks (for the centers)
Instructions
- Preheat oven to 350°F (175°C)
- Place chocolates in the freezer. Melt butter then mix together with sugars until smooth
- Mix in egg and vanilla
- In a separate bowl, combine flour, cocoa powder, baking soda, and salt
- Gradually mix dry ingredients into wet ingredients
- Scoop dough into balls and place on a lined baking tray. Chill for 60 minutes. (Optional but recommended.)
- Press a chocolate piece into the center of each cookie.
- Bake for 8-10 minutes
- Let cool slightly (if you can wait 😭)

Tips for the best cookies
- Don’t over bake – they’ll continue to set as they cool
- Place chocolates in the freezer so they keep their shape while baking, you could also just press them into the cookies immediately after baking if you prefer.
- Roll the cookie balls in sugar before baking for that bakery look!
What I used
- Mixing bowls ~ everyday staples – I love my Mason cash mixing bowls!
- Cookie scoop ~ for even cookies
- Baking trays ~ bakes evenly every time
