Ingredients
•170g butter
•120g brown sugar
•60g white sugar
•1 egg + 1 egg yolk
•1 1/2tsp vanilla
•1-1 1/2 tbsp espresso powder
•200g all purpose flour
•1/2tsp baking soda
•1/2tsp salt
•100g mini chocolate chips
Instructions
1. Brown the butter by melting over medium heat until golden with brown specks and a nutty aroma. Let cool 10–15 minutes.
2. Dissolve espresso powder in 1 tbsp hot water, then mix into the butter.
3. Whisk butter with sugars until glossy. Add egg, yolk, and vanilla.
4. Fold in flour, baking soda, and salt until just combined.
5. Fold in mini chocolate chips.
6. Refrigerate for at least 2 hours (or overnight for best flavor).
7. Scoop & bake. 375°f for 8-12 minutes
Centers should look slightly underbaked—they’ll set as they cool. Let cool for 2 minutes on the tray then place them on a cooling rack.
